It all depends on the data type. For DV and MPEG-2 TS, there are RFCs
for RTP payloads. Fr DV, there is this project, for example:
http://www.sfc.wide.ad.jp/DVTS/.
MPEG-2 over IP is covered by quite a few projects, videolan included.
